Muffins

Confession: I hoard baking liners. I can’t have enough. Just look at them, how can one have enough??

In order to reduce my stash for new ones I decided to bake some muffins today.

I asked Devang what type of muffin he would like. His reply: oh blueberry, chocolate chip, banana walnut?

I like the question mark at the end. As if he was giving me a choice to pick one. He knows I have problems being decisive.

So of course I didn’t pick one. I opened my Joy of Cooking to the muffin section. I picked the standard muffin recipe and divided the batter in three. To one I added blueberries; mashed ripe banana and walnuts to second; chocolate chips to the third.

I don’t know why I haven’t thought of this before. A dozen of just one flavor can get boring. Why not have three.

Recipe adapted from Joy of Baking:

Pre heat oven  to 400 F

2 cups bread flour
1 tbsp baking powder
1/2 tsp salt
2 large eggs
1 cup milk
2/3 cups white sugar
1 tbsp molasses
1/4 cup melted butter
1/4 cup canola oil
1 tsp vanilla extract

Mix the first three dry ingredients in a bowl. In a bigger bowl mix the wet ingredients. Add the flour slowly to the wet mixer. Do not over mix. Add your choice of flavor (s). Again, do not over mix. Spoon batter into muffin cups and bake.
