The FOCACCIA edit

I checked out this cookbook from the library so many times, before I realized that, you know, I could just buy it!

I mostly don’t like cooking because my audience is tough and I am just sick of it all on most days. I sure hope there is a time in the future when I can cook what I want to eat without a million comments about how it sucks. It is what it is. I am not taking it personally or anything you know. or AM I???

Baking (vs cooking) certainly seems more enjoyable to all audiences, I am happy to report. And once in a while, I can get away with the baking being that of a bread rather than a cake or cookie for instance. Fresh homemade bread with a slathering of good butter. I mean, come on! Is there even anything out there more satisfying?

Yesterday, pretty late in the day, I had a hankering for the comfort of warm bread. TOAST BREAD CRUMBS doesn’t care how late it is in the day because apparently baking bread with just a couple of hours on hand is its specialty!

My recipe of choice was the Focaccia with grapes, pancetta, and rosemary on page 68. I didn’t have pancetta, and forgot all about the rosemary even though we have a huge bush. My focaccia instead had grapes, red onions, and olives.

And you know what, it was ALL GOOD! Thank you Ms. Stafford. I am thankful that you wrote this book.
